This Slow Cooker Cajun Potato Soup is creamy, hearty, and packed with bold Cajun flavors! Made with tender potatoes, smoky sausage, and a rich, spicy broth, this comforting soup is perfect for chilly nights and requires minimal effort thanks to the slow cooker!

Ingredients

  • 4 cups potatoes, peeled & diced (Yukon Gold or Russet work best!)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can fire-roasted diced tomatoes (drained!)
  • 1 (14 oz) package smoked sausage or andouille, sliced (for that smoky kick!)
  • 4 cups chicken broth (or vegetable broth for a lighter version!)
  • 1 tsp Cajun seasoning (adjust for heat level!)
  • ½ tsp smoked paprika (adds depth!)
  • ½ tsp salt (adjust to taste!)
  • ¼ tsp black pepper
  • ½ tsp dried thyme (optional, for extra flavor!)
  • ½ cup heavy cream or half-and-half (for creaminess!)
  • 1 cup shredded cheddar cheese (for a cheesy touch!)
  • 2 tbsp butter (optional, for richness!)
  • 2 tbsp cornstarch + 3 tbsp water (to thicken, if needed!)

For Serving:

  • Chopped green onions or parsley
  • Extra shredded cheese
  • Crumbled bacon (optional!)

Instructions

Step 1: Assemble the Ingredients in the Slow Cooker

  1. Add potatoes, onion, garlic, diced tomatoes, sausage, chicken broth, Cajun seasoning, paprika, salt, pepper, and thyme to the slow cooker.
  2. Stir everything together.

Step 2: Slow Cook the Soup

  1. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until potatoes are tender.
  2. Once cooked, lightly mash some of the potatoes for a thicker texture.

Step 3: Add Cream & Cheese

  1. Stir in heavy cream (or half-and-half), cheddar cheese, and butter.
  2. If the soup is too thin, mix 2 tbsp cornstarch with 3 tbsp water, then stir into the soup and let cook for another 10-15 minutes to thicken.

Step 4: Serve & Enjoy!

  1. Ladle into bowls and top with green onions, extra cheese, and crispy bacon!
  2. Serve with crusty bread or cornbread for a delicious meal!
