This Slow Cooker Chicken and Stuffing is an easy, comforting meal made with tender chicken, flavorful stuffing, and a creamy sauce. It’s the perfect set-it-and-forget-it dinner for busy nights!

Ingredients

  • 2 large boneless, skinless chicken breasts (or 4 small)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 (10.5 oz) can cream of chicken soup
  • ½ cup sour cream (or Greek yogurt)
  • ½ cup chicken broth
  • 1 (6 oz) box stuffing mix (such as Stove Top)
  • 1 teaspoon dried parsley (optional)
  • 1 cup frozen mixed vegetables (optional)
  • 2 tablespoons unsalted butter, melted

Instructions


  1. Prepare the slow cooker
     – Lightly grease the crockpot with cooking spray.
  2. Season the chicken – Place chicken in the slow cooker and season with salt, pepper, garlic powder, and onion powder.
  3. Mix the sauce – In a bowl, mix cream of chicken soup, sour cream, and chicken broth. Pour over the chicken.
  4. Add the stuffing – Sprinkle dry stuffing mix over the top, then drizzle melted butter evenly over the stuffing.
  5. Slow cook – Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and reaches 165°F (75°C) internally.
  6. Stir & serve – If adding mixed vegetables, stir them in during the last 30 minutes of cooking. Shred the chicken slightly and mix with the stuffing before serving.

Notes


  • Make It Creamier:
     Add ½ cup milk for a richer sauce.
  • Herb Flavor Boost: Add ½ teaspoon thyme and sage for more holiday flavor.
