For the Garlic Parmesan Sauce:

  • 4 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for spice)
  • 1 tablespoon cornstarch + 2 tablespoons water (for thickening, optional)

For Garnish:

  • ¼ cup fresh parsley, chopped
  • Extra Parmesan cheese for topping

Instructions

  1. Prepare the chicken & potatoes:

    • In a large bowl, toss the chicken and potatoes with olive oil (or melted butter), salt, pepper, Italian seasoning, garlic powder, onion powder, and paprika.
    • Place them in the slow cooker in an even layer.
  2. Make the garlic Parmesan sauce:

    • In a separate bowl, whisk together minced garlic, heavy cream, Parmesan cheese, salt, black pepper, and red pepper flakes.
  3. Slow cook:

    • Pour the sauce over the chicken and potatoes.
    • Cover and cook on low for 5-6 hours or high for 3-4 hours, until the chicken is tender and the potatoes are soft.
  4. Thicken the sauce (optional):
