This Slow Cooker Honey Garlic Chicken & Noodles features tender, juicy chicken slow-cooked in a rich honey garlic sauce, then tossed with noodles for an easy and comforting meal. Perfect for busy weeknights, this dish is both sweet and savory with a hint of garlic and soy sauce!

For the Chicken & Sauce:

  • 2 pounds boneless, skinless chicken breasts (or thighs)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon sesame oil (optional, for extra flavor)
  • ½ cup honey
  • ¼ cup soy sauce (low-sodium preferred)
  • 2 tablespoons hoisin sauce (optional, for extra depth)
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons rice vinegar (or apple cider vinegar)
  • 1 teaspoon red pepper flakes (optional, for heat)
  • ½ cup chicken broth

For Thickening (Optional):

  • 1 tablespoon cornstarch + 2 tablespoons water (slurry)

For the Noodles:

  • 8 oz noodles (lo mein, ramen, or spaghetti)
  • 1 tablespoon butter or sesame oil (for tossing)

For Garnish:

  • 2 green onions, chopped
  • 1 tablespoon sesame seeds
  • Extra red pepper flakes (for spice)

Instructions

  • Prepare the chicken:

    • Season chicken with salt, black pepper, and garlic powder.
    • Place in the slow cooker.
  • Make the sauce:

    • In a bowl, whisk together honey, soy sauce, hoisin sauce, garlic, ginger, vinegar, red pepper flakes, and chicken broth.
    • Pour over the chicken in the slow cooker.
  • Slow cook:

    • Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until the chicken is tender and easily shreddable.
  • Thicken the sauce (optional):

    • If you want a thicker sauce, whisk cornstarch and water together, then stir into the slow cooker.
    • Cook on HIGH for 15 more minutes, until thickened.
  • Cook the noodles:

    • About 15 minutes before serving, cook noodles according to package instructions.
    • Drain and toss with butter or sesame oil.
  • Shred the chicken & combine:

    • Shred the cooked chicken and return it to the slow cooker.
    • Add the cooked noodles and toss everything together until well coated in sauce.
  • Serve & garnish:

    • Garnish with green onions, sesame seeds, and extra red pepper flakes.
    • Serve hot and enjoy!
