This Smoked Beef & Bleu Cheese Pita Wrap combines tender, smoky beef with creamy bleu cheese, crisp veggies, and a tangy sauce, all wrapped in warm pita bread. It’s the perfect fusion of BBQ and Mediterranean flavors!

For the Smoked Beef:
  • 1½ lbs beef tri-tip, flank steak, or chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes (optional)
For the Wraps:
  • 4 pita breads or flatbreads, warmed
  • ½ cup crumbled bleu cheese
  • 1 cup mixed greens or arugula
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
For the Sauce:

  • ½ cup Greek yogurt or sour cream
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the Smoker: Set your smoker to 225°F and use wood like hickory, mesquite, or oak for a deep, smoky flavor.

  2. Season the Beef: Rub the beef with olive oil, then coat evenly with salt, pepper, garlic powder, smoked paprika, onion powder, and crushed red pepper flakes.

  3. Smoke the Beef: Place the beef directly on the smoker grates. Smoke for 2-3 hours, or until the internal temperature reaches 130-135°F for medium-rare, or 140-145°F for medium.

  4. Rest & Slice: Remove the beef from the smoker, let it rest for 10-15 minutes, then thinly slice against the grain.

  5. Make the Sauce: In a small bowl, mix the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, and black pepper.

  6. Assemble the Wraps:

    • Spread the sauce on each pita.
    • Add mixed greens, sliced smoked beef, cherry tomatoes, and red onion.
    • Sprinkle with crumbled bleu cheese.
  7. Serve & Enjoy: Fold the pita wraps and serve warm. Optionally, grill them lightly for extra crispiness!

Notes

  • No smoker? Grill the beef over medium-high heat for 5-6 minutes per side, then slice.
  • Prefer a milder cheese? Swap bleu cheese for feta or goat cheese.
