  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 12 ounces pasta (such as penne or rigatoni)
  • 1/2 cup reserved pasta water
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)
  • Salt to taste

Instructions

  1. Preheat smoker to 225°F (107°C) using hickory or applewood pellets.
  2. Place cream cheese on a piece of foil or in a small grill-safe dish. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, and black pepper.
  3. Smoke cream cheese for 1 to 1.5 hours until softened and infused with smoky flavor.
  4. Meanwhile, cook pasta according to package instructions. Reserve 1/2 cup pasta water before draining.
  5. In a large bowl, combine smoked cream cheese, Parmesan, and enough reserved pasta water to create a smooth sauce.
  6. Toss cooked pasta in the sauce until well coated. Add additional pasta water if needed for creaminess.
  7. Season with salt to taste and garnish with fresh basil or parsley before serving.
