Ingredients

Scale
For the Ribs:
  • 3 lbs baby back ribs (or St. Louis-style ribs)
  • 2 tablespoons yellow mustard (for binding)
  • ¼ cup BBQ dry rub (store-bought or homemade)
  • ½ cup apple juice (for spritzing)
  • 2 tablespoons butter (for wrapping)
  • ¼ cup honey (for wrapping)
  • ¼ cup brown sugar (for wrapping)
For the Glaze:

  • ½ cup BBQ sauce (your favorite brand)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon hot sauce (optional)

Instructions

1. Preheat the Smoker
  • Set your smoker to 225°F and use wood like hickory, apple, or cherry for the best flavor.
2. Prep the Ribs
  1. Remove the membrane from the back of the ribs using a paper towel for grip.
  2. Coat the ribs with yellow mustard to help the seasoning stick.
  3. Season generously with BBQ dry rub on both sides.
3. Smoke the Ribs (3-2-1 Method for Baby Back Ribs)
  1. Smoke uncovered for 3 hours, spritzing with apple juice every hour to keep them moist.
  2. Wrap the ribs: Lay out foil, add butter, honey, and brown sugar. Place the ribs meat-side down, wrap tightly, and return to the smoker for 2 hours.
  3. Glaze & Finish: Remove the foil, brush with the BBQ glaze, and place the ribs back on the smoker for 1 hour until caramelized.
4. Serve & Enjoy!

  • Let the ribs rest for 10 minutes, then slice into party-sized portions and serve hot!

Notes

  • Want crispier ribs? After glazing, sear them on a hot grill for 5 minutes.
  • Prefer spicier ribs? Add cayenne pepper to your rub or hot sauce to the glaze.

  • Short on time? Use the 2-2-1 method (2 hours smoked, 2 hours wrapped, 1 hour glazed) for faster results.
