A hearty and comforting smoked sausage, apple, and potato soup that combines savory smoked sausage, tender potatoes, and sweet apples in a flavorful broth — perfect for a cozy fall or winter meal.

  • 1 tbsp olive oil
  • 12 oz smoked sausage, sliced into rounds
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 3 medium potatoes, peeled and diced
  • 1 large apple, peeled and diced
  • 1/2 tsp dried thyme
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1/2 cup heavy cream (optional, for added creaminess)
  • 2 tbsp chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced smoked sausage and cook for 4-5 minutes until lightly browned. Transfer sausage to a plate and set aside.
  2. In the same pot, add diced onion and cook for 3-4 minutes until softened. Add minced garlic and cook for 1 minute more.
  3. Pour in the broth and bring to a boil. Add diced potatoes, apple, thyme, and smoked paprika.
  4. Reduce heat and simmer for 15-20 minutes or until potatoes are tender.
  5. Return the browned sausage to the pot and stir in heavy cream, if using. Simmer for 2-3 more minutes to heat through.
  6. Season with salt and black pepper to taste.
  7. Garnish with fresh parsley and serve warm with crusty bread.

  • Use a sweet apple like Honeycrisp or Gala for a nice balance of flavors.
  • Substitute half-and-half for heavy cream for a lighter version.
  • Leftovers keep well in the fridge for up to 3 days.
