Preheat the Smoker: Set your smoker to 225°F and use wood like hickory, apple, or cherry for a subtle smoky flavor.
Prepare the Vegetables: Toss the halved tomatoes, onion, and garlic with olive oil, salt, pepper, smoked paprika, and red pepper flakes.
Smoke the Tomatoes: Place the tomatoes (cut side up), onion, and garlic directly on the smoker grates or on a foil-lined baking sheet. Smoke for 1½ to 2 hours, until softened and slightly charred.
Blend the Soup: Transfer the smoked tomatoes, onion, and garlic to a blender or food processor. Add fresh basil and blend until smooth.
