This Smoked Tomato Basil Soup takes the classic comfort dish to the next level with deep, smoky flavors from fire-roasted tomatoes. Slowly smoked and blended with fresh basil, garlic, and cream, it’s the perfect cozy meal for any season.

Ingredients

  • 2 lbs ripe Roma or vine tomatoes, halved
  • 1 small white onion, quartered
  • 4 cloves garlic, peeled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional, for extra smokiness)
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 3 cups vegetable broth (or chicken broth)
  • ½ cup fresh basil leaves
  • 1 teaspoon dried oregano
  • ½ cup heavy cream (or coconut milk for dairy-free)
  • 2 tablespoons butter (optional, for richness)
  • Parmesan cheese (for garnish, optional)

Instructions

  • Preheat the Smoker: Set your smoker to 225°F and use wood like hickory, apple, or cherry for a subtle smoky flavor.

  • Prepare the Vegetables: Toss the halved tomatoes, onion, and garlic with olive oil, salt, pepper, smoked paprika, and red pepper flakes.

  • Smoke the Tomatoes: Place the tomatoes (cut side up), onion, and garlic directly on the smoker grates or on a foil-lined baking sheet. Smoke for 1½ to 2 hours, until softened and slightly charred.

  • Blend the Soup: Transfer the smoked tomatoes, onion, and garlic to a blender or food processor. Add fresh basil and blend until smooth.

  • Simmer & Finish: Pour the blended mixture into a large pot over medium heat. Stir in vegetable broth, dried oregano, and butter (if using). Simmer for 10-15 minutes to deepen the flavors.

 

  • Add Cream & Serve: Reduce heat to low, stir in heavy cream, and simmer for another 5 minutes. Adjust seasoning to taste. Serve warm with a sprinkle of Parmesan and extra basil!

Notes

  • No smoker? Roast the tomatoes, onion, and garlic in the oven at 400°F for 40 minutes, then add ½ teaspoon liquid smoke for a similar effect.
  • Want it thicker? Simmer longer or add a small amount of tomato paste.
