Smokey Sausage, Kale & Sweet Potato Soup is a hearty and comforting dish packed with flavorful smoked sausage, tender sweet potatoes, and nutrient-rich kale in a savory broth. Perfect for chilly nights or cozy meals any time of year.

Ingredients

  • 1 tablespoon olive oil
  • 12 oz smoked sausage, sliced into rounds
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 3 cups chopped kale, stems removed

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, about 5 minutes. Remove and set aside.
  2. Add onion and garlic to the pot and sauté for 2–3 minutes until softened.
  3. Stir in sweet potatoes, chicken broth, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10–15 minutes or until sweet potatoes are tender.
  4. Add kale and cooked sausage to the pot. Simmer for another 5 minutes, until kale is wilted and flavors meld.
  5. Taste and adjust seasoning as needed. Serve hot.

Notes

  • For a spicy kick, add a pinch of red pepper flakes or use spicy sausage.
  • This soup stores well and tastes even better the next day.
  • Use vegetable broth and plant-based sausage for a vegetarian version.
