  • For the fries:
    • 4 large russet potatoes, cut into fries or wedges
    • 2 tablespoons olive oil
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon garlic powder
    • Salt and black pepper, to taste
  • For the toppings:
    • 6 slices bacon, cooked until crispy and crumbled
    • 2 tablespoons unsalted butter
    • 2 cloves garlic, minced
    • 1/2 cup (50 g) freshly grated Parmesan cheese
    • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Prepare the potatoes:
    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
    • In a large bowl, toss the potato fries with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  2. Bake the fries:
    • Spread the potatoes in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  3. Cook the bacon:
    • While the fries bake, cook the bacon in a skillet over medium heat until crispy. Remove and crumble. Set aside.
  4. Make the garlic butter:
    • In the same skillet, melt the butter over low heat. Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant. Remove from heat.
  5. Assemble the fries:
    • Transfer the baked fries to a serving platter. Drizzle with the garlic butter and sprinkle with crumbled bacon, grated Parmesan cheese, and parsley if using.
  6. Serve immediately:
    • Enjoy these smoky, garlicky fries while they’re hot!
