These smoky bourbon BBQ bacon-wrapped meatloaf cupcakes are packed with savory flavor and topped with creamy mashed potato ‘frosting’ for a fun and hearty twist on classic comfort food.

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/4 cup smoky BBQ sauce
  • 2 tablespoons bourbon
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 68 slices bacon
  • 4 cups mashed potatoes (prepared)
  • 2 tablespoons butter (for mashed potatoes)
  • 1/4 cup milk or cream (for mashed potatoes)
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin.
  2. In a large bowl, combine ground beef, ground pork, breadcrumbs, milk, onion, garlic, egg, BBQ sauce, bourbon, smoked paprika, salt, and pepper. Mix until just combined.
  3. Line each muffin cup with a slice of bacon around the edge.
  4. Fill each bacon-lined cup with the meat mixture, pressing gently to pack.
  5. Bake for 25-30 minutes or until the meat is cooked through and the bacon is crispy.
  6. While the meatloaf cupcakes bake, prepare mashed potatoes with butter and milk or cream until smooth and creamy. Season to taste.
  7. Once cupcakes are done, remove from oven and let rest for 5 minutes.
  8. Pipe or spoon mashed potatoes on top of each meatloaf cupcake like frosting.
  9. Garnish with chopped chives or parsley if desired. Serve warm.

  • Use a piping bag for a more decorative mashed potato topping.
  • You can make these ahead of time and reheat before serving.
