The Smoky Mezcal Sour is a bold and balanced cocktail that combines the rich, smoky flavor of mezcal with bright citrus and a silky foam from egg white. It’s a sophisticated twist on a classic sour cocktail.

Ingredients

  • 2 ounces mezcal
  • 3/4 ounce fresh lime juice
  • 1/2 ounce fresh lemon juice
  • 3/4 ounce simple syrup
  • 1 egg white
  • Ice
  • Angostura bitters, for garnish (optional)
  • Lime or lemon twist, for garnish

Instructions

  1. In a shaker (without ice), combine mezcal, lime juice, lemon juice, simple syrup, and egg white.
  2. Dry shake vigorously for 15–20 seconds to emulsify the egg white.
  3. Add ice to the shaker and shake again until well chilled.
  4. Strain into a chilled coupe or rocks glass.
  5. Garnish with a few drops of Angostura bitters and a citrus twist if desired. Serve immediately.

Notes

  • Dry shaking without ice first ensures a better foam from the egg white.
  • For a vegan version, substitute aquafaba (chickpea brine) for the egg white.
  • Adjust sweetness by increasing or decreasing the simple syrup to taste.
