This Snickerdoodle Cobbler is a warm, gooey dessert that combines the classic flavors of cinnamon and sugar with a soft cobbler crust and a rich caramel-like sauce. It’s a perfect cozy treat, especially when served with a scoop of vanilla ice cream!

For the cobbler base:

  • 1 1/2 cups (190 g) all-purpose flour
  • 1 cup (200 g) granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 3/4 cup (180 ml) whole milk
  • 1/2 cup (115 g) unsalted butter, melted

For the topping:

  • 1 cup (200 g) brown sugar, packed
  • 1 tablespoon ground cinnamon

For the sauce:

  • 1 1/2 cups (360 ml) hot water

Instructions

1. Preheat the oven

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or nonstick spray.

2. Make the cobbler batter

  1. In a large mixing bowl, whisk together the flour, granulated sugar, salt, and baking powder.
  2. Stir in the milk and melted butter until just combined. The batter will be thick.
  3. Spread the batter evenly into the prepared baking dish.

3. Prepare the topping

  1. In a small bowl, mix the brown sugar and cinnamon until well combined.
  2. Sprinkle the cinnamon-sugar mixture evenly over the batter.

4. Add the hot water

  1. Slowly pour the hot water over the entire dish, ensuring it covers the surface evenly. Do not stir. The water will create a gooey sauce as the cobbler bakes.

5. Bake the cobbler

  • Bake in the preheated oven for 40–45 minutes, or until the top is golden brown and the edges are bubbly.

6. Serve

  • Let the cobbler cool for about 10 minutes to allow the sauce to thicken slightly. Serve warm with vanilla ice cream or whipped cream for the ultimate dessert experience.

Notes

  • Extra flavor: Add a pinch of nutmeg or a teaspoon of vanilla extract to the batter for extra depth.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven before serving.
