Snowy Pineapple Punch is a refreshing and frosty beverage that’s perfect for holiday gatherings or winter parties. This creamy and fruity punch is made with pineapple juice, coconut milk, and fizzy soda, topped with a snowy garnish for a festive touch.

  • 4 cups pineapple juice, chilled
  • 1 cup coconut milk (canned, full-fat or light)
  • 2 cups lemon-lime soda or ginger ale, chilled
  • 1 cup sparkling water (optional, for extra fizz)
  • 1/2 cup cream of coconut (e.g., Coco Lopez)
  • Ice cubes or crushed ice
  • Garnishes: shredded coconut, pineapple wedges, or maraschino cherries

Instructions

  1. Prepare the Punch Base:
    • In a large pitcher or punch bowl, whisk together the pineapple juice, coconut milk, and cream of coconut until smooth.
  2. Add the Fizz:
    • Just before serving, gently stir in the lemon-lime soda and sparkling water (if using) for fizz.
  3. Serve:
    • Fill glasses with ice cubes or crushed ice. Pour the punch into the glasses.
  4. Garnish:
    • Sprinkle shredded coconut on top of each glass for a snowy effect. Add a pineapple wedge or maraschino cherry on the rim for decoration.

Notes

  • For an adult version, add 1–2 cups of rum or coconut rum to the punch.
  • To make it extra festive, rim the glasses with shredded coconut: dip the rims in pineapple juice, then into coconut before pouring in the punch.
  • This recipe can be doubled or tripled for larger gatherings.
