These Soft Peanut Butter Cookies are melt-in-your-mouth delicious with a tender, chewy texture and rich peanut butter flavor. Perfect for snacks, desserts, or sharing, they’re easy to make and irresistibly good.

Ingredients

Scale
  • 1/2 cup (115 g) unsalted butter, softened
  • 1/2 cup (120 g) creamy peanut butter
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (160 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Mix the wet ingredients:
    • In a large bowl, cream the softened butter, peanut butter, granulated sugar, and brown sugar together until light and fluffy. Beat in the egg and vanilla extract until well combined.
  3. Combine the dry ingredients:
    • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Shape the cookies:
    • Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets. Use a fork to gently flatten each ball, making a crisscross pattern.
  5. Bake the cookies:
    • Bake for 8-10 minutes, or until the edges are set and the tops look slightly crackled. Avoid overbaking to keep the cookies soft.
    • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  6. Serve:
    • Enjoy these cookies fresh with a glass of milk or store them for later!

Notes

  • Storage: Store in an airtight container at room temperature for up to 5 days.
  • Freezing: Freeze unbaked dough balls for up to 3 months. Bake from frozen, adding 1-2 minutes to the baking time.
  • Peanut butter: Use natural peanut butter for a more intense peanut flavor, but ensure it’s well-stirred to prevent separation.
