A classic fried pastry from Hispanic cuisine, sopapillas are light, fluffy pillows of dough that puff up when fried and are often served with honey or powdered sugar.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons shortening or butter
  • 3/4 cup warm water
  • Vegetable oil for frying
  • Honey or powdered sugar for serving

Instructions

  1. In a large bowl, mix flour, baking powder, and salt.
  2. Cut in shortening or butter until mixture resembles coarse crumbs.
  3. Add warm water gradually, mixing until a soft dough forms.
  4. Knead dough briefly on a floured surface until smooth. Cover and let rest for 20 minutes.
  5. Roll dough out to about 1/4-inch thickness and cut into 3-inch squares or triangles.
  6. Heat oil in a deep fryer or large skillet to 375°F (190°C).
  7. Fry sopapillas a few at a time, turning once, until golden brown and puffed, about 1 minute per side.
  8. Remove with a slotted spoon and drain on paper towels.
  9. Serve warm, drizzled with honey or sprinkled with powdered sugar.

Notes

  • Ensure oil is hot enough for sopapillas to puff properly.
  • Try serving with cinnamon sugar or dipping in chocolate sauce.
  • Sopapillas are best enjoyed fresh and warm.
