These Cornbread Poppers are soft, slightly crispy, and bursting with sweet honey butter flavor. They’re the perfect bite-sized treat for dipping in chili, soups, or enjoying as a snack!

For the Cornbread Poppers:

  • 1 cup cornmeal
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup unsalted butter, melted
  • ¼ cup honey
  • ½ cup buttermilk
  • 1 large egg
  • ½ teaspoon vanilla extract

For the Honey Butter Glaze:

 

  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons honey

Instructions

  • Preheat & Prep:

    • Preheat oven to 375°F (190°C). Grease a mini muffin tin or spray with nonstick spray.
  • Make the Batter:

    • In a bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
    • In another bowl, whisk melted butter, honey, buttermilk, egg, and vanilla extract.
    • Gradually mix the wet ingredients into the dry ingredients until just combined.
  • Bake the Poppers:

    • Spoon batter into the mini muffin tin, filling each cup about ¾ full.
    • Bake for 10-12 minutes, or until golden brown and a toothpick comes out clean.

 

  • Glaze & Serve:

    • In a small bowl, mix melted butter and honey.
    • Brush the warm cornbread poppers with the honey butter glaze.
    • Serve warm and enjoy!

Notes

  • Add 1/2 cup shredded cheddar cheese for a cheesy version.
  • Want a kick? Mix in ¼ teaspoon cayenne pepper or diced jalapeños.
  • Serve with whipped honey butter or maple butter for extra indulgence!
