These Southern Salmon Croquettes are crispy on the outside, tender on the inside, and packed with classic Southern flavors! Made with canned salmon, seasonings, and a crispy golden crust, this budget-friendly dish is perfect for a quick weeknight meal, brunch, or as an appetizer. Serve them with tartar sauce, remoulade, or over grits for a true Southern experience!

  • 1 (14.75 oz) can pink salmon, drained and flaked (bones removed, if desired)
  • ½ small onion, finely diced
  • ½ small bell pepper, finely diced (optional)
  • 1 large egg
  • ½ cup breadcrumbs (or crushed saltine crackers)
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • ½ tsp Old Bay seasoning (or Cajun seasoning)
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley (or 1 tsp dried)
  • 2 tbsp vegetable oil (for frying)

Instructions

Step 1: Prepare the Salmon Mixture

  1. In a large bowl, combine flaked salmon, diced onion, bell pepper (if using), egg, breadcrumbs, mayonnaise, mustard, Old Bay seasoning, garlic powder, black pepper, lemon juice, and parsley.
  2. Mix well until all ingredients are evenly combined. If the mixture is too wet, add a little more breadcrumbs.

Step 2: Shape the Croquettes

  1. Form the mixture into 6–8 small patties (about ½ inch thick).

Step 3: Fry the Croquettes

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add croquettes to the skillet and cook for 3–4 minutes per side, or until golden brown and crispy.
  3. Remove and drain on a paper towel-lined plate.

Step 4: Serve & Enjoy

  1. Serve warm with tartar sauce, remoulade, or over grits for a true Southern meal. Enjoy!

Notes

  • Make it Spicy: Add ¼ tsp cayenne pepper or a few dashes of hot sauce.
  • Baked Option: Bake at 400°F (200°C) for 15–18 minutes, flipping halfway through.
  • Air Fryer Option: Spray croquettes with cooking spray and air fry at 375°F for 10–12 minutes, flipping once.
  • Storage: Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
