1 small head green cabbage, finely shredded (about 6 cups)
1 large carrot, grated
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon sugar
1/2 teaspoon celery seed
Salt and pepper to taste
Instructions
In a large bowl, combine shredded cabbage and grated carrot.
In a separate bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, celery seed, salt, and pepper until smooth.
Pour the dressing over the cabbage mixture and toss until everything is evenly coated.
Cover and refrigerate for at least 1 hour before serving to let the flavors meld.
Stir before serving and adjust seasoning if needed.
Notes
For a lighter version, substitute half the mayonnaise with Greek yogurt.
