Soy Sauce Fried Rice is a quick and flavorful dish made with day-old rice stir-fried with soy sauce, garlic, and green onions. It’s an easy and satisfying side or main dish.

Ingredients

  • 3 cups cooked day-old white rice
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 2 eggs, beaten
  • 2 cloves garlic, minced
  • 1/2 cup chopped green onions
  • 1/2 cup frozen peas and carrots (optional)
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the beaten eggs and scramble until fully cooked. Remove and set aside.
  3. Add sesame oil and garlic to the pan, sauté for 30 seconds until fragrant.
  4. Add the peas and carrots (if using) and cook for 2-3 minutes until warmed through.
  5. Add the rice, breaking up any clumps. Stir-fry for 2-3 minutes to heat through.
  6. Pour soy sauce over the rice and mix well to coat evenly. Season with salt and pepper as needed.
  7. Return the scrambled eggs to the pan and stir in green onions. Cook for 1-2 more minutes.
  8. Serve hot as a side or main dish.

Notes

  • Day-old rice is best for texture; freshly cooked rice may become mushy.
  • Add cooked chicken, shrimp, or tofu to make it a full meal.
  • Adjust soy sauce to taste based on saltiness preference.
