Spanish Garlic Shrimp (Gambas al Ajillo) is a classic tapas dish made with succulent shrimp sautéed in olive oil, garlic, and a hint of chili. It’s quick, flavorful, and perfect served with crusty bread.

  • 1 lb raw shrimp, peeled and deveined
  • 1/4 cup extra virgin olive oil
  • 6 cloves garlic, thinly sliced
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1/2 tsp smoked paprika (optional)
  • Salt to taste
  • 2 tbsp chopped fresh parsley
  • 1 tbsp fresh lemon juice
  • Crusty bread, for serving

Instructions

  1. Pat the shrimp dry with paper towels and season lightly with salt.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add sliced garlic and red pepper flakes, cooking gently until the garlic is golden and fragrant, about 2 minutes.
  4. Increase the heat to medium-high and add the shrimp in a single layer.
  5. Cook shrimp for 1-2 minutes per side, or until they turn pink and opaque.
  6. Stir in smoked paprika (if using), lemon juice, and chopped parsley.
  7. Remove from heat and serve immediately with crusty bread to soak up the garlic oil.

Notes

  • Do not overcook the garlic, as it can become bitter.
  • Use high-quality olive oil for the best flavor.
  • This dish is best served immediately while hot and sizzling.
