Spanish Rice, also known as Mexican Rice, is a flavorful side dish made with rice, tomatoes, onions, and spices. It’s the perfect accompaniment to tacos, enchiladas, and more.

Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups chicken broth
  • 1 cup canned tomato sauce
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet, heat oil over medium heat. Add rice and cook, stirring frequently, until lightly golden brown, about 5 minutes.
  2. Add chopped onion and garlic, and cook for another 2-3 minutes until softened and fragrant.
  3. Stir in chicken broth, tomato sauce, cumin, chili powder, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and liquid is absorbed.
  5. Fluff with a fork and let sit covered for 5 minutes before serving. Garnish with fresh cilantro if desired.

Notes

  • Use vegetable broth to make it vegetarian.
  • Adjust spices to your heat preference.
  • Add peas, carrots, or bell peppers for extra flavor and color.
