Ingredients

1 cup long-grain white rice
2 tablespoons vegetable oil
1/2 small onion, finely chopped
2 cloves garlic, minced
1 1/2 cups chicken broth
1 cup canned tomato sauce
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions
In a large skillet, heat oil over medium heat. Add rice and cook, stirring frequently, until lightly golden brown, about 5 minutes.
Add chopped onion and garlic, and cook for another 2-3 minutes until softened and fragrant.
Stir in chicken broth, tomato sauce, cumin, chili powder, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and liquid is absorbed.
Fluff with a fork and let sit covered for 5 minutes before serving. Garnish with fresh cilantro if desired.
Notes
Use vegetable broth to make it vegetarian.
Adjust spices to your heat preference.
Add peas, carrots, or bell peppers for extra flavor and color.
