Special K Bars are a no-bake dessert made with crunchy cereal, a gooey peanut butter mixture, and a rich chocolate-butterscotch topping. They’re quick to make and perfect for potlucks, bake sales, or family treats.

Ingredients

  • 6 cups Special K cereal
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 1/2 cups creamy peanut butter
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips

Instructions

  1. Grease a 9×13 inch baking dish and set aside.
  2. In a large saucepan over medium heat, combine sugar and corn syrup. Stir constantly until the mixture begins to boil. Remove from heat.
  3. Stir in peanut butter until smooth and well blended.
  4. Gently fold in the Special K cereal until fully coated.
  5. Press the cereal mixture evenly into the prepared baking dish using a spatula or wax paper.
  6. In a microwave-safe bowl, combine chocolate chips and butterscotch chips. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
  7. Pour the melted chocolate-butterscotch mixture over the cereal layer and spread evenly.
  8. Let bars cool at room temperature or refrigerate until the topping is set. Cut into squares and serve.

Notes

  • Do not overheat the sugar mixture or the bars may become too hard.
  • Line the pan with parchment paper for easier removal and cleanup.
  • Store bars in an airtight container at room temperature for up to 5 days.
  • Try crunchy peanut butter for added texture.
