These noodles are tossed in a rich, creamy peanut butter sauce with a hint of spice, garlic, and soy sauce. They’re quick, satisfying, and can be served warm or cold!

For the Noodles:

  • 8 oz noodles (spaghetti, ramen, rice noodles, or soba)
  • 1 teaspoon sesame oil (optional, to prevent sticking)

For the Spicy Peanut Sauce:

  • ¼ cup creamy peanut butter
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey (or maple syrup for vegan)
  • 1 teaspoon sriracha (or chili garlic sauce, adjust for spice)
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • ½ teaspoon grated ginger
  • 23 tablespoons warm water (to thin the sauce)

For Toppings (Optional but Recommended!):

  • 2 tablespoons chopped peanuts
  • 1 green onion, sliced
  • ½ teaspoon red pepper flakes (for extra spice)
  • 1 teaspoon sesame seeds
  • ½ cup shredded carrots (for crunch)
  • ½ cup cucumber slices (for freshness)

Instructions

  1. Cook the Noodles:

    • Bring a pot of water to a boil and cook noodles according to package instructions.
    • Drain and toss with 1 teaspoon sesame oil to prevent sticking.
  2. Make the Peanut Sauce:

    • In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sriracha, sesame oil, garlic, and ginger.
    • Add warm water gradually, whisking until smooth and creamy.
  3. Toss the Noodles:

    • Pour the peanut sauce over the cooked noodles and toss until evenly coated.
  4. Garnish & Serve:

    • Top with chopped peanuts, green onions, red pepper flakes, sesame seeds, carrots, and cucumber slices.
    • Serve warm or chilled!

 


Notes

  • Make It a Meal: Add grilled chicken, shrimp, tofu, or edamame for extra protein.
  • Make It Low-Carb: Swap noodles for zucchini noodles or shirataki noodles.
  • Extra Spice: Add more sriracha, chili flakes, or a drizzle of chili oil.
