This bold and creamy pasta combines tender chicken, sautéed bell peppers, and a rich Cajun Alfredo sauce, finished with a spicy kick of jalapeños and red pepper flakes. Perfect for those who love creamy, cheesy, and spicy pasta dishes!

For the Chicken:

  • 2 boneless, skinless chicken breasts, sliced
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • ½ tsp garlic powder
  • ½ tsp black pepper

For the Pasta & Sauce:

  • 12 oz penne pasta
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 small red bell pepper, sliced
  • 1 small green bell pepper, sliced
  • 1 small jalapeño, thinly sliced (optional, for extra spice)
  • 1 ½ cups heavy cream (or half & half for a lighter version)
  • 1 cup grated Parmesan cheese
  • 1 tsp Cajun seasoning
  • ½ tsp red pepper flakes (adjust to taste)
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup chopped fresh parsley (for garnish)

Instructions

1. Cook the Pasta

  1. Bring a large pot of salted water to a boil and cook penne pasta until al dente.
  2. Drain and set aside.

2. Cook the Chicken

  1. In a bowl, toss chicken slices with Cajun seasoning, garlic powder, and black pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook the chicken for 5-6 minutes, until golden brown and fully cooked. Remove from the pan and set aside.

3. Sauté the Vegetables

  1. In the same pan, melt butter over medium heat.
  2. Add garlic, bell peppers, and jalapeño. Sauté for 3-4 minutes, until softened.

4. Make the Creamy Cajun Sauce

  1. Pour in heavy cream and bring to a gentle simmer.
  2. Stir in Parmesan cheese, Cajun seasoning, red pepper flakes, salt, and black pepper.
  3. Let simmer for 2 minutes, stirring until smooth.

5. Combine & Serve

  1. Add the cooked pasta and chicken to the sauce, tossing to coat.
  2. Garnish with fresh parsley and extra Parmesan.
  3. Serve immediately with garlic bread or a side salad!

Notes

  • Make it even spicier: Add extra jalapeños, cayenne pepper, or hot sauce.
  • Want a seafood twist? Swap chicken for shrimp.
  • Lighter option: Use half & half instead of heavy cream.
