A bold and smoky twist on the classic margarita, featuring grilled pineapple, spicy jalapeños, and a splash of mezcal for a unique cocktail experience.

Ingredients

Scale
  • 2 oz mezcal (or tequila for a milder flavor)
  • 1 oz triple sec or orange liqueur
  • 1 oz fresh lime juice
  • 1 oz grilled pineapple juice (or fresh pineapple juice)
  • 1/2 oz agave syrup (optional, to taste)
  • 2 slices grilled pineapple
  • 23 jalapeño slices
  • Ice
  • Chili-lime salt or Tajín, for rimming glass
  • Lime wedge, for garnish
  • Jalapeño slice, for garnish

Instructions

  1. Grill pineapple slices until charred, then blend to extract juice. Strain and set aside.
  2. Rim a glass with lime wedge and dip into chili-lime salt or Tajín. Set aside.
  3. In a cocktail shaker, muddle jalapeño slices with grilled pineapple juice.
  4. Add mezcal, triple sec, lime juice, and agave syrup (if using). Fill with ice and shake well.
  5. Strain into the prepared glass over fresh ice.
  6. Garnish with a lime wedge and jalapeño slice. Serve immediately.

Notes

  • Adjust jalapeño amount based on spice preference.
  • Use tequila instead of mezcal for a less smoky flavor.
  • Make pineapple juice in advance and chill for quicker preparation.
  • For extra depth, smoke the glass with a smoking gun before pouring.
