Spinach Stuffed Chicken Breast is a delicious and healthy dish featuring juicy chicken breasts filled with a savory mixture of spinach, cream cheese, and garlic, then baked to perfection.

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • Toothpicks, for securing

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook spinach until wilted, about 2-3 minutes. Remove from heat.
  3. In a bowl, mix cooked spinach, cream cheese, mozzarella cheese, and garlic until well combined.
  4. Cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
  5. Stuff each chicken breast with the spinach mixture and secure the opening with toothpicks.
  6. Brush chicken with olive oil and season with salt, pepper, paprika, and onion powder.
  7. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through (internal temp of 165°F/74°C).
  8. Remove toothpicks before serving.

Notes

  • You can substitute frozen spinach (thawed and drained) if fresh isn’t available.
  • Try adding chopped sun-dried tomatoes or mushrooms to the filling for extra flavor.
  • Serve with a side of roasted vegetables or a light salad.
