These Springtime Crinkle Cookies are soft, chewy, and bursting with pastel colors—perfect for Easter, baby showers, or any spring celebration. With their crackly powdered sugar coating and fun colors, they look as good as they taste. No chill time needed, and they come together in under 30 minutes!

Ingredients

  • 1 box white cake mix (15.25 oz)

  • 1/3 cup vegetable oil

  • 2 large eggs

  • 1 tsp vanilla extract

  • Food coloring (pink, yellow, green, or your choice of pastel shades)

  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Make the Dough:
    In a large bowl, mix the cake mix, oil, eggs, and vanilla until a dough forms.

  3. Color the Dough:
    Divide the dough into 3–4 small bowls. Add a few drops of different pastel food colorings to each and mix until evenly colored.

  4. Shape the Cookies:
    Scoop about 1 tablespoon of dough, roll into a ball, then roll in powdered sugar until well coated.

  5. Bake:
    Place dough balls 2 inches apart on the prepared baking sheet. Bake for 9–11 minutes, or until the cookies are puffed and crinkled but still soft in the center.

  6. Cool:
    Let the cookies cool on the baking sheet for 2–3 minutes before transferring to a wire rack.

Notes

  • For extra festive cookies, sprinkle with pastel sanding sugar before baking.

  • Store in an airtight container at room temperature for up to 4 days.

 

  • You can freeze the dough balls (before rolling in powdered sugar) and bake them later.
