These St. Patrick’s Day Sugar Cookie Bars are an easy way to enjoy sugar cookies without all the rolling and cutting! They’re soft, buttery, and topped with a luscious green frosting for a festive touch.

For the Sugar Cookie Bars:

  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon almond extract (optional, for extra flavor)
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

For the Frosting:

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream or milk (adjust for consistency)
  • 1 teaspoon vanilla extract
  • Green food coloring
  • St. Patrick’s Day sprinkles (for decoration)

 


Instructions

Step 1: Make the Cookie Bars

  1. Preheat Oven & Prepare Pan:

    • Preheat oven to 350°F (175°C).
    • Line an 8×8-inch or 9×9-inch baking pan with parchment paper or lightly grease it.
  2. Mix Wet Ingredients:

    • In a large bowl, beat butter and sugar until light and fluffy (about 2 minutes).
    • Mix in egg, vanilla extract, and almond extract until smooth.
  3. Combine Dry Ingredients:

    • In another bowl, whisk together flour, baking powder, and salt.
    • Gradually add dry ingredients to the wet mixture, mixing until just combined.
  4. Bake:

    • Spread dough evenly into the prepared pan.
    • Bake for 18-22 minutes, or until edges are lightly golden and the center is set.
    • Let cool completely before frosting.

Step 2: Make the Frosting

  1. Beat the Butter:

    • In a bowl, beat butter until smooth.
  2. Add Powdered Sugar & Liquid:

    • Gradually mix in powdered sugar, vanilla extract, and heavy cream, beating until fluffy.
    • Stir in green food coloring until you reach the desired shade.

Step 3: Assemble & Decorate

  1. Frost the Bars:

    • Spread frosting evenly over the cooled cookie bars.
  2. Add Sprinkles:

    • Decorate with St. Patrick’s Day sprinkles for a festive look.
  3. Slice & Serve:

    • Cut into squares and enjoy!

Notes

  • Want extra flavor? Add ½ teaspoon of mint extract to the frosting for a Shamrock-inspired treat!
