Chewy, chocolatey Star Crunch cookies made with caramel, crispy rice cereal, and chocolate, a nostalgic no-bake treat that’s quick and easy to make.

  • 1/2 cup unsalted butter
  • 1 package (11 oz) caramel bits or soft caramel candies
  • 1/4 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 3 cups crispy rice cereal

Instructions

  1. In a large saucepan over medium heat, melt the butter and caramel bits together with the heavy cream, stirring constantly until smooth.
  2. Remove from heat and stir in the chocolate chips until fully melted and combined.
  3. Gently fold in the crispy rice cereal until evenly coated with the caramel-chocolate mixture.
  4. Drop spoonfuls of the mixture onto a parchment-lined baking sheet and flatten slightly into cookie shapes.
  5. Let the cookies cool at room temperature until set, or refrigerate for faster setting.
  6. Once firm, enjoy immediately or store in an airtight container.

Notes

  • If using caramel candies, unwrap them before melting.
  • Work quickly when forming cookies as the mixture will start to firm up as it cools.
  • For a richer flavor, use dark chocolate chips.
