Ingredients

Scale

Serves 4

  • For the steak bites:
    • 1 lb (450 g) steak (sirloin, ribeye, or filet), cut into bite-sized pieces
    • 2 tablespoons olive oil
    • 1 tablespoon unsalted butter
    • 2 cloves garlic, minced
    • 1 teaspoon Italian seasoning
    • Salt and black pepper, to taste
  • For the pasta:
    • 12 oz (340 g) rotini pasta
    • 2 tablespoons unsalted butter
    • 2 cloves garlic, minced
    • 1 1/2 cups (360 ml) heavy cream
    • 3/4 cup (75 g) grated Parmesan cheese
    • 1/4 teaspoon red pepper flakes (optional)
    • Salt and black pepper, to taste
    • 2 tablespoons chopped fresh parsley (plus extra for garnish)

Instructions

  1. Cook the rotini:
    • Bring a large pot of salted water to a boil and cook the rotini according to the package instructions until al dente. Drain and set aside.
  2. Prepare the steak bites:
    • Season the steak pieces with Italian seasoning, salt, and black pepper.
    • Heat the olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer and sear for 2-3 minutes per side until browned and cooked to your desired doneness.
    • Remove the steak from the skillet and set aside.
    • Reduce the heat to medium, melt the butter in the same skillet, and stir in the minced garlic. Cook for 1 minute until fragrant, then return the steak bites to the skillet, tossing to coat them in the garlic butter. Remove and keep warm.
  3. Make the garlic Parmesan sauce:
    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
    • Stir in the heavy cream and red pepper flakes (if using). Bring to a gentle simmer and cook for 2-3 minutes, stirring frequently.
    • Add the Parmesan cheese, stirring until melted and the sauce thickens slightly. Season with salt and pepper to taste.
  4. Combine pasta and sauce:
    • Add the cooked rotini to the skillet with the sauce. Toss to coat the pasta evenly. Stir in the chopped parsley.
  5. Assemble and serve:
    • Plate the creamy pasta and top with the garlic butter steak bites. Garnish with extra Parmesan cheese and fresh parsley. Serve immediately.

Notes

  • For a smoky flavor, use smoked paprika to season the steak bites.
  • Add sautéed mushrooms or spinach for extra texture and nutrition.
  • Use freshly grated Parmesan for the best flavor and smooth sauce.
