1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1/4 cup brown sugar
1 large egg
1 tsp vanilla extract
1 ripe banana, mashed
2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup chopped fresh strawberries
4 oz cream cheese, softened
2 tbsp powdered sugar
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg, vanilla extract, and mashed banana until combined.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into wet ingredients until just combined.
Gently fold in chopped strawberries.
In a small bowl, mix cream cheese and powdered sugar until smooth.
Scoop cookie dough onto prepared baking sheet. Make a small indent in each cookie and add a small spoonful of cheesecake mixture into the center. Swirl slightly with a toothpick.
Bake for 12-14 minutes or until edges are lightly golden.
Cool on baking sheet for 5 minutes before transferring to a wire rack.
Notes
Use firm, fresh strawberries to prevent excess moisture.
