1 batch of brownies, cut into 1-inch squares
1 pint fresh strawberries, hulled
1/2 cup semi-sweet chocolate chips
1 tsp coconut oil or vegetable oil (optional, for melting chocolate)
Skewers or wooden sticks
Instructions
Cut brownies into bite-sized squares and set aside.
Wash and hull the strawberries.
Thread a brownie square, followed by a strawberry, onto each skewer. Repeat until the skewer is filled (typically 2–3 of each per skewer).
In a microwave-safe bowl, melt the chocolate chips with the oil in 30-second intervals, stirring in between until smooth.
Drizzle the melted chocolate over the kabobs using a spoon or piping bag.
Place the kabobs on a tray lined with parchment paper and chill in the refrigerator for 10–15 minutes to set the chocolate.
Serve chilled or at room temperature.
Notes
Use white chocolate or dark chocolate for variation.
