  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup (60 ml) heavy cream
  • 1/4 cup (50 g) powdered sugar
  • 1 tsp vanilla extract

For the Strawberry Topping:

  • 2 cups (300 g) fresh strawberries, hulled and diced
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice

Optional Garnishes:

  • Whipped cream
  • Chocolate drizzle (melted chocolate or chocolate syrup)
  • Crushed graham crackers

Instructions

  1. Prepare the Cinnamon-Sugar Chips:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
    • Mix the granulated sugar and cinnamon in a small bowl.
    • Brush both sides of the tortillas with melted butter, then sprinkle evenly with the cinnamon-sugar mixture.
    • Cut each tortilla into wedges (about 8 pieces per tortilla) and arrange them in a single layer on the baking sheet.
    • Bake for 8-10 minutes, or until golden and crispy. Let cool completely.
  2. Make the Cheesecake Filling:
    • In a large bowl, beat the cream cheese until smooth.
    • Add the heavy cream, powdered sugar, and vanilla extract. Beat until light and fluffy. Transfer to a piping bag or a zip-top bag with the corner cut off for easy application.
  3. Prepare the Strawberry Topping:
    • In a medium bowl, toss the diced strawberries with sugar and lemon juice. Let sit for 10 minutes to release their juices.
  4. Assemble the Nachos Box:
    • Arrange the cinnamon-sugar chips in a serving box or platter.
    • Pipe or dollop the cheesecake filling over the chips.
    • Spoon the macerated strawberries over the top.
  5. Add Garnishes and Serve:
    • Drizzle with chocolate, add whipped cream, or sprinkle with crushed graham crackers for extra flavor and texture. Serve immediately.
