A healthy and refreshing strawberry chia seed pudding made with just a few simple ingredients. Perfect for breakfast, snack, or dessert.

Ingredients

  • 1 cup fresh strawberries, hulled
  • 1 cup unsweetened almond milk
  • 2 tablespoons maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chia seeds

Instructions

  1. In a blender, combine the strawberries, almond milk, maple syrup, and vanilla extract. Blend until smooth.
  2. Pour the mixture into a bowl or jar and stir in the chia seeds.
  3. Let the mixture sit for 5 minutes, then stir again to prevent clumping.
  4. Cover and refrigerate for at least 4 hours or overnight until the pudding is thickened.
  5. Stir before serving and top with additional sliced strawberries if desired.

Notes

  • You can use any plant-based milk like coconut or oat milk for variation.
  • Adjust sweetness by adding more or less maple syrup.
