Strawberry Chicken is a sweet and savory dish that’s perfect for spring and summer. Juicy grilled or pan-seared chicken is topped with a simple strawberry balsamic salsa that adds a pop of color and flavor. It’s light, refreshing, and easy enough for a weeknight, but elegant enough to impress guests!

For the Chicken:

  • 2 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1/2 teaspoon garlic powder

  • Salt and black pepper, to taste

For the Strawberry Balsamic Salsa:

  • 1 cup fresh strawberries, diced

  • 2 tablespoons red onion, finely chopped

  • 1 tablespoon fresh basil or mint, chopped

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon honey (optional, for extra sweetness)

  • Pinch of salt and pepper

Instructions

  1. Prepare the Chicken: Pat chicken dry and season with garlic powder, salt, and pepper.

  2. Heat olive oil in a skillet over medium-high heat. Cook chicken for 5–6 minutes per side, or until golden and cooked through (internal temp 165°F). Remove from heat and let rest.

  3. Make the Salsa: In a small bowl, combine strawberries, red onion, basil, balsamic vinegar, honey (if using), salt, and pepper. Toss gently.

  4. Assemble: Slice the chicken and top with a generous spoonful of strawberry salsa.

  5. Serve immediately, with rice, salad, or roasted veggies on the side.

Notes

  • For a grilled version, just season and grill the chicken instead of pan-searing.

  • Try goat cheese or feta crumbles on top for a creamy touch.

  • The salsa is also great over pork chops or as a dip with crackers!
