Strawberry Chicken is a sweet and savory dish that’s perfect for spring and summer. For the Chicken:
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 teaspoon garlic powder
Salt and black pepper, to taste
For the Strawberry Balsamic Salsa:
1 cup fresh strawberries, diced
2 tablespoons red onion, finely chopped
1 tablespoon fresh basil or mint, chopped
1 tablespoon balsamic vinegar
1 teaspoon honey (optional, for extra sweetness)
Pinch of salt and pepper
Prepare the Chicken: Pat chicken dry and season with garlic powder, salt, and pepper.
Heat olive oil in a skillet over medium-high heat. Cook chicken for 5–6 minutes per side, or until golden and cooked through (internal temp 165°F). Remove from heat and let rest.
Make the Salsa: In a small bowl, combine strawberries, red onion, basil, balsamic vinegar, honey (if using), salt, and pepper. Toss gently.
Assemble: Slice the chicken and top with a generous spoonful of strawberry salsa.

For a grilled version, just season and grill the chicken instead of pan-searing.
