1/2 cup unsalted butter, softened
8 oz (225 g) cream cheese, softened
1/2 cup strawberry puree (from fresh or frozen strawberries, strained)
1 teaspoon vanilla extract
4 cups powdered sugar, sifted
Pinch of salt
Instructions
In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy.
Add the strawberry puree and vanilla extract, and mix until fully incorporated.
Gradually add the powdered sugar, one cup at a time, mixing well after each addition until the desired consistency is reached.
Add a pinch of salt to balance the sweetness and enhance the flavor.
Beat on high speed for 1–2 minutes until light and fluffy.
Use immediately to frost cupcakes or cakes, or refrigerate for up to 3 days. Bring to room temperature and re-whip before using.
Notes
Use fresh strawberries for best flavor, but thawed frozen strawberries work too.
Strain the puree to avoid seedy texture in the frosting.
Can be tinted with a drop of natural red food coloring for a more vibrant pink hue.
