These Strawberry Donut Rolls are a delightful mashup of fluffy donuts and fruity strawberry goodness. Rolled with a sweet strawberry filling, topped with a luscious glaze, and finished with sprinkles or powdered sugar, these rolls are perfect for breakfast, brunch, or dessert.

For the Dough:

  • 2 1/4 tsp (1 packet) active dry yeast
  • 3/4 cup warm milk (110°F/45°C)
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 tsp salt
  • 2 1/2 cups all-purpose flour

For the Strawberry Filling:

  • 1 1/2 cups fresh strawberries, diced
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

For the Glaze:

  • 1 cup powdered sugar
  • 23 tbsp milk (or as needed)
  • 1/2 tsp vanilla extract

Instructions

  1. Make the Dough:
    • In a small bowl, combine warm milk and yeast. Let sit for 5 minutes until foamy.
    • In a large bowl, mix sugar, melted butter, egg, and salt. Stir in the yeast mixture. Gradually add flour, mixing until a soft dough forms.
    • Knead the dough on a floured surface for 8-10 minutes, or until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1-2 hours, or until doubled in size.
  2. Prepare the Strawberry Filling:
    • In a small saucepan, combine strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens, about 5-7 minutes. Set aside to cool completely.
  3. Assemble the Rolls:
    • Roll the dough out into a large rectangle, about 12×18 inches. Spread the cooled strawberry filling evenly over the surface.
    • Roll the dough tightly into a log, starting from the long side. Cut into 12 even pieces and place them in a greased baking dish.
    • Cover and let rise for 30 minutes.
  4. Bake the Rolls:
    • Preheat your oven to 350°F (175°C). Bake the rolls for 20-25 minutes, or until golden brown. Remove from the oven and let cool slightly.
  5. Prepare the Glaze:
    • In a bowl, whisk powdered sugar, milk, and vanilla extract until smooth. Adjust the milk for desired consistency.
  6. Finish and Serve:
    • Drizzle the glaze over the warm rolls. Add sprinkles for a fun touch, or dust with powdered sugar. Serve warm and enjoy!
