2 pounds fresh strawberries, hulled and chopped
4 cups granulated sugar
1/4 cup lemon juice (freshly squeezed)
Instructions
In a large pot, combine strawberries, sugar, and lemon juice. Stir well and let sit for 10–15 minutes to macerate.
Place the pot over medium-high heat and bring to a boil, stirring frequently.
Reduce heat to medium and continue boiling for 20–25 minutes, stirring often, until the mixture thickens and reaches 220°F (105°C) on a candy thermometer.
Skim off any foam that forms on top.
To test for doneness, place a small spoonful on a chilled plate—if it wrinkles when pushed, it’s ready.
Remove from heat and let cool slightly. Pour into sterilized jars and seal.
Let cool completely at room temperature, then store in the fridge or process in a water bath for shelf stability.
Notes
For chunkier jam, lightly mash strawberries before cooking.
Use a candy thermometer for best results, or use the chilled plate method.
