Strawberry Lemon Blondies are soft, chewy dessert bars bursting with fresh strawberries and bright lemon flavor, topped with a zesty lemon glaze for a perfect spring or summer treat.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup fresh strawberries, chopped
  • 1 tbsp all-purpose flour (for tossing strawberries)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tbsp lemon juice
  • 1/2 tsp lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, whisk together melted butter and sugar until well combined.
  3. Add egg, lemon juice, lemon zest, and vanilla extract. Mix until smooth.
  4. Stir in flour, baking powder, and salt until just combined.
  5. Toss chopped strawberries with 1 tbsp flour, then gently fold them into the batter.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
  8. In a small bowl, whisk together powdered sugar, lemon juice, and zest to make the glaze.
  9. Drizzle glaze over cooled blondies. Let set before slicing and serving.

Notes

  • Ensure strawberries are well dried to avoid excess moisture in the blondies.
  • Store in an airtight container in the refrigerator for up to 5 days.
  • Can substitute raspberries for strawberries for a different twist.
