These Strawberry Oatmeal Bars are soft, chewy, and bursting with fresh strawberry flavor! Made with wholesome oats and a buttery crumb topping, they make a perfect breakfast, snack, or healthy dessert.

For the Oat Crust & Topping:

  • 1 ½ cups (120 g) rolled oats
  • 1 cup (125 g) all-purpose flour (or whole wheat flour)
  • ½ cup (100 g) brown sugar
  • ½ teaspoon cinnamon (optional)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (115 g) butter, melted
  • 1 teaspoon vanilla extract

For the Strawberry Filling:

  • 2 cups fresh strawberries, diced (or frozen, thawed and drained)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon cornstarch (for thickening)
  • 1 teaspoon lemon juice


Instructions

1️⃣ Preheat & Prep

  • Preheat oven to 350°F (175°C).
  • Line an 8×8-inch baking dish with parchment paper and lightly grease it.

2️⃣ Make the Oat Crust

  • In a large bowl, mix oats, flour, brown sugar, cinnamon, baking soda, and salt.
  • Stir in melted butter and vanilla extract until crumbly.

3️⃣ Prepare the Strawberry Filling

  • In a bowl, mix strawberries, honey (or maple syrup), cornstarch, and lemon juice.

4️⃣ Assemble the Bars

  • Press ⅔ of the oat mixture firmly into the bottom of the pan.
  • Spread the strawberry filling evenly over the crust.
  • Sprinkle the remaining oat mixture on top.

5️⃣ Bake & Cool

  • Bake for 30-35 minutes, until golden brown and bubbly.
  • Let cool completely before cutting into squares.

6️⃣ Serve & Enjoy!

  • Enjoy warm or chilled, with a drizzle of honey or a scoop of vanilla yogurt!


Notes

🌰 Nutty Version? Add ½ cup chopped almonds or pecans to the topping.
