Strawberry Poke Cake is a light and fluffy dessert made with white cake, strawberry gelatin, and whipped topping. The cake is poked to absorb the fruity filling, making it moist and bursting with strawberry flavor.

Ingredients

Scale
  • 1 box white cake mix (plus ingredients listed on the box: usually eggs, oil, and water)
  • 1 (3 oz) box strawberry gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 (8 oz) tub whipped topping (like Cool Whip), thawed
  • 1 cup fresh strawberries, chopped (optional, for garnish)

Instructions

  1. Prepare and bake the white cake according to package instructions in a 9×13-inch baking dish. Let cool for 15 minutes.
  2. Using the handle of a wooden spoon, poke holes all over the surface of the cake.
  3. In a medium bowl, whisk together the strawberry gelatin and boiling water until dissolved. Stir in the cold water.
  4. Slowly pour the gelatin mixture evenly over the cake, allowing it to soak into the holes.
  5. Refrigerate the cake for at least 3 hours, or until fully set.
  6. Spread the whipped topping evenly over the chilled cake.
  7. Garnish with chopped fresh strawberries if desired and serve chilled.

Notes

  • Use sugar-free gelatin for a lighter version.
  • For added texture, layer sliced strawberries between the cake and topping.
  • Store covered in the refrigerator for up to 3 days.
