This homemade Strawberry Syrup is sweet, fresh, and full of real strawberry flavor. It’s super easy to make with just a few simple ingredients and tastes way better than store-bought. Drizzle it over pancakes, waffles, desserts, or mix it into drinks for a fruity twist!

Ingredients

  • 2 cups fresh or frozen strawberries, hulled and chopped

  • 1/2 cup granulated sugar

  • 1/2 cup water

  • 1 teaspoon lemon juice

  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. In a medium saucepan, combine strawberries, sugar, and water. Bring to a boil over medium heat.

  2. Reduce heat and simmer for about 10–12 minutes, stirring occasionally, until strawberries are very soft and the mixture thickens slightly.

  3. Use a potato masher or spoon to mash the berries gently while simmering.

  4. Remove from heat and stir in lemon juice and vanilla extract (if using).

  5. Strain through a fine mesh sieve into a bowl or jar to remove solids, or leave it chunky if you like texture.

  6. Let cool slightly, then transfer to a jar or bottle. Store in the fridge for up to 1 week.

Notes

  • Adjust sweetness to taste β€” add more sugar for a thicker, sweeter syrup.

  • For a thicker syrup, simmer longer or stir in a cornstarch slurry (1 tsp cornstarch + 1 tbsp water).

  • Great over pancakes, French toast, cheesecake, or stirred into lemonade!
