- 2 tbsp (30g) unsalted butter
- ¼ cup (15g) freeze-dried strawberries, crushed into powder (or 2 tbsp strawberry jam for fresh flavor)
- ½ tsp vanilla extract
- Pinch of salt
For Coating:
- ½ cup (75g) freeze-dried strawberries, crushed
- ½ cup (100g) white chocolate, melted (optional, for dipping)
Instructions
- Make the Strawberry Ganache:
- In a small saucepan, heat the heavy cream and butter over medium heat until steaming (but not boiling).
- Pour the hot cream mixture over the white chocolate in a heatproof bowl. Let it sit for 1 minute, then stir until smooth.
- Add the strawberry powder (or jam), vanilla extract, and salt. Mix well.
- Chill the Mixture:
- Cover the bowl with plastic wrap and refrigerate for 1-2 hours, or until the ganache is firm enough to scoop.
- Shape the Truffles:
- Scoop tablespoon-sized portions of the ganache and roll them into balls with your hands.
- Place the balls on a parchment-lined baking sheet and chill in the refrigerator for 15-20 minutes to firm up.
- Coat the Truffles:
- Roll each truffle in the crushed freeze-dried strawberries for a vibrant pink coating.
- Optionally, dip the truffles in melted white chocolate before rolling in the strawberry powder for an extra layer of sweetness.
- Serve:
- Store the truffles in an airtight container in the refrigerator for up to 1 week. Serve chilled or at room temperature.
Notes
- For a smoother coating, sift the freeze-dried strawberry powder before rolling the truffles.
