4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tablespoons cream cheese, softened
1 garlic clove, minced
1/2 teaspoon dried Italian seasoning
Salt and pepper, to taste
1 tablespoon olive oil

Instructions
Preheat oven to 375°F (190°C).
In a medium bowl, combine chopped spinach, mozzarella, Parmesan, cream cheese, minced garlic, Italian seasoning, salt, and pepper.
Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
Spoon the spinach-cheese mixture evenly into each pocket. Secure with toothpicks to keep the filling inside.
Season the outside of the chicken breasts with salt and pepper.
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 3–4 minutes per side until golden brown.
Transfer the skillet to the preheated oven and bake for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Remove toothpicks before serving. Serve warm with your favorite sides.
Notes
Try adding sun-dried tomatoes or chopped artichokes to the filling for extra flavor.
If you don’t have an oven-safe skillet, transfer chicken to a baking dish after searing.
Let the chicken rest for a few minutes before slicing to keep it juicy.
