  • 1 (16.5 oz) package refrigerated sugar cookie dough
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • Sprinkles (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. Press the sugar cookie dough evenly into the bottom of the prepared pan to form the crust.
  3. In a medium bowl, beat the cream cheese until smooth.
  4. Add sugar, vanilla extract, and egg, and mix until fully combined and creamy.
  5. Pour the cheesecake mixture over the cookie dough and spread evenly.
  6. Top with sprinkles if using.
  7. Bake for 30–35 minutes, or until the center is set and the edges are lightly golden.
  8. Cool completely, then refrigerate for at least 2 hours before slicing into bars.
