For the bowls:
1 cup cooked quinoa (or brown rice)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup corn kernels (fresh or grilled)
1/2 cup shredded carrots
1 avocado, sliced
1/2 cup fresh blueberries or strawberries, sliced
1/4 cup crumbled feta or goat cheese (optional)
1/4 cup chopped fresh basil or mint
2 tablespoons sunflower seeds or chopped almonds
Salt and pepper to taste
For the dressing:
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon honey or maple syrup
1 teaspoon Dijon mustard

Cook quinoa or rice according to package directions. Let cool slightly.
