This creamy tomato pasta is a simple, delicious, and comforting dish that comes together in under 30 minutes. With a rich, creamy tomato sauce and perfectly cooked pasta, it’s the ultimate quick dinner for busy weeknights or lazy evenings.

Ingredients

  • 12 oz (340g) pasta (spaghetti, penne, or your favorite type)
  • 2 tbsp olive oil or unsalted butter
  • 3 garlic cloves, minced
  • 1 can (14 oz/400g) crushed tomatoes or tomato passata
  • ½ cup (120ml) heavy cream
  • 1 tsp dried Italian seasoning (or a mix of oregano and basil)
  • ¼ tsp red pepper flakes (optional, for a slight kick)
  • Salt and black pepper, to taste
  • ¼ cup (25g) grated Parmesan cheese, plus more for serving
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the rest.
  2. Make the Sauce:
    • In a large skillet, heat the olive oil or butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
    • Stir in the crushed tomatoes, Italian seasoning, and red pepper flakes (if using). Simmer for 5-7 minutes to slightly thicken the sauce.
  3. Add the Cream and Cheese:
    • Lower the heat and stir in the heavy cream until the sauce is smooth and creamy. Add the grated Parmesan cheese and stir until melted. Season with salt and black pepper to taste.
  4. Combine the Pasta and Sauce:
    • Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, use the reserved pasta water, a little at a time, to loosen it to your desired consistency.
  5. Serve:
    • Divide the pasta among plates or bowls. Top with additional Parmesan cheese and garnish with fresh basil leaves. Serve immediately.


Notes

  • Add cooked chicken, shrimp, or sautéed vegetables for extra protein or variety.
  • For a dairy-free version, substitute the heavy cream with coconut cream or cashew cream.
  • This dish is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water or cream.
