Surprise Inside Cheesecake Bites are delightful mini cheesecakes with a hidden sweet filling such as fruit preserves or chocolates—perfect for parties, holidays, or bite-sized indulgence.

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/2 cup sour cream
  • 1216 small candy pieces (e.g., chocolate truffles, mini peanut butter cups) or teaspoons of fruit preserves
  • Optional toppings: whipped cream, fresh fruit, or chocolate drizzle

Instructions

  1. Preheat oven to 325°F (165°C). Line a mini muffin tin with paper liners or grease lightly.
  2. In a mixing bowl, beat cream cheese and sugar until smooth. Add vanilla, egg, and sour cream; beat until fully combined.
  3. Spoon about 1 tsp of cheesecake batter into each cup.
  4. Add a candy or 1 tsp of fruit preserves in the center of each cup.
  5. Top with more cheesecake batter until just full.
  6. Bake 15–18 minutes or until the edges are set and centers jiggle slightly.
  7. Cool in pan for 10 minutes, then transfer to a rack to cool completely.
  8. Refrigerate for at least 1 hour before serving. Add optional toppings if desired.

  • Do not overfill the cups; aim for even layers above and below the filling.
